Classic Method Sparkling Wine “Le mie Bollicine Etichetta Rossa” by Rudy Cosimi is another of the nuances of creativity and experimentalism of this winery. It is the first sparkling wine vinified from pure Sangiovese Grosso grapes, the same ones that give life to the famous Montalcino wine, cradled and nourished in the precious Tuscan lands. It is a precious sparkling wine. You discover it immediately, as soon as it is poured into the glass. Its color is elegant and refined, straw yellow with delicate but evident pink reflections.
The perlage is rich, fine and persistent, while on the nose there are clear hints of flowers and bread crust. In the mouth it has a pleasantly acidic note and a delicate bitter aftertaste. It is lively and effervescent, of rare refinement, produced in just 4,000 pieces each year.
Grape variety: Sangiovese Grosso (Brunello) 100% grown in our vineyards in Montalcino
Winemaking: Soft pressing of whole grapes and fermentation at 18'C in stainless steel and second fermentation according to the classic method at 12'C
Maturation: 36 months on its own yeasts in the bottle at a temperature of 12-14'C. From the day of disgorgement it remains for 9 months in our temperature-controlled cellar before being put on sale
